Mario Costa Dolcificato Gorgonzola Gran Riserva Quite extraordinary. From Mario Costa, a small producer and affineur in Novara, just west of Milan (Gorgonzola itself is actually just east of Milan). The recipe and ageing techniques are a closely guarded secret with this, surely the world's finest Gorgonzola. With a texture not dissimilar to double cream, this is arguably the most difficult cheese we have to deal with! But, my goodness, it produces some interesting noises at the cheese counter when we do a little impromptu tasting! A special cheese indeed - so soft we have to send it out in a heat-sealed tray!
